Food Cost Percentage for Egyptian Restaurants: Targets & How to Control It

For most Egyptian restaurants, a healthy food cost percentage is roughly 28-35% of food sales, meaning ingredients should eat about a third of what a dish sells for. Quick-service and takeaway concepts aim lower (around 25-30%), while full-service and fine dining sit a little higher (30-35%). If your food cost drifts above 35%, your menu is either underpriced or losing money to waste and theft.

The formula

Food cost % = (Opening inventory + Purchases - Closing inventory) / Food sales x 100

Count your stock at the start and end of a period, add what you bought, and divide by what you sold. Do it monthly at minimum; weekly is better for fast-moving kitchens.

Realistic targets by concept

  • Quick service / takeaway (koshary, fuul, shawarma): ~25-30%
  • Fast casual: ~27-32%
  • Casual full service: ~30-33%
  • Fine dining: ~30-35%

These are early-2026 estimates; ranges vary by area, size and the pound's exchange rate, so treat them as planning guides, not quotes. These are starting points - your real target depends on your prices and your market.

Why Egypt is a special case

Egypt has lived through sharp food inflation (it peaked above 70% year-on-year in 2023 before cooling to single digits by early 2026). When ingredient prices jump, a food-cost target you set six months ago can quietly blow past 40% without you changing a thing on the menu. That means Egyptian restaurants must reprice more often than textbooks assume - and you can only do that if you actually know your current cost per dish.

How to control it

  • Cost every recipe. Know the exact ingredient cost of each dish, not a guess. When supplier prices rise, you see immediately which items turned unprofitable.
  • Track inventory tightly. Waste, over-portioning and theft hide in the gap between what you bought and what you sold.
  • Use menu engineering. Push the high-margin, popular dishes; fix or drop the low-margin ones.
  • Reprice on a schedule. In an inflationary market, review prices monthly against live costs.

This is exactly where software pays for itself. DineCore's inventory and menu-engineering tools calculate live food cost per item, flag items that slip below target margin, and show you what to reprice - so you catch a cost spike in days, not at year-end. See pricing; a full system starts at 15,000 EGP/year, a rounding error next to the money lost to an untracked 5% food-cost creep.

Stop guessing your food cost. Sign up, load your recipes and suppliers, and let the numbers tell you what to charge.

Frequently asked questions

Is 30% food cost good or bad? For a casual full-service restaurant it's healthy. For a quick-service concept it's a little high. Always judge it against your concept, not a single universal number.

How often should I recalculate? Monthly at minimum. In a market where ingredient prices move fast, weekly counts on high-value items (meat, cheese, oil) catch problems before they eat a whole month's margin.

My food cost jumped but my recipes didn't change - why? Almost always supplier price rises, over-portioning or waste/theft. Costed recipes plus tight inventory tell you which one it is.
